Master cake baker, Buddy Valastro of TLC's "Cake Boss", demonstrates the making of some of his bakery's most popular cakes.

1.
"Mod Squad" Cake
- Follow the recipes to the right to bake and cover the cake in purple fondant.
- After the cake has been covered in fondant, roll out various other colors – green, yellow, purple and chocolate.
- Using scalloped fondant cutters cut out various sizes from the colored fondant and circles from the chocolate fondant.
- Steam one area of the cake and place the circles in-side of one another and finish by placing a chocolate dot in the middle.

"Snow Day" Cake
- Follow the recipes to the right to bake and cover the cake in light blue fondant.
- Using the same technique roll out white fondant.
- Using a snowflake press – press out some snowflakes and put aside.
- Using a paintbrush and some iridescent edible paint you can be lightly paint around and make some of the blue fondant "pop".
- Steam the desired areas and attach the snowflakes to the cake.
- Use crystal sugar to put the finishing touches on as you see fit.

"Take a Bow" Cake
- Follow the recipes to the right to bake and cover the cake in pink fondant.
- Roll out chocolate fondant and using circle cutters cut out 3 different sizes, set aside.
- Using the same colored fondant and a strip cutter - cut a strip of about 5 to 6 inches long by 3/4 of an inch wide.
- Fold the strip so the ends meet in the middle.
- Cut a strip about 2-3 inches long and wrap around the other strip to make the "knot" in the bow tie.

"Here Comes the Sun" Cake
- Follow the recipes to the right to bake and cover the cake in sage green fondant.
- Start with white buttercream (follow the recipe to the right) and add in yellow food dye until the right color is attained.
- Scoop in buttercream into piping bag with number 69 or 70 tip already attached.
- Pipe each leaf separately going around to create the overall sunflower design.
- Use chocolate/brown icing to create the center of the flower.

"Fall for Me" Cake
- Follow the recipes to the right to bake and cover the cake in ivory fondant.
- Place chocolate fudge into a piping bag with a number 4 tip already attached.
- Pipe branches onto the cake.
- Once again, roll out fondant (like before) and using a leaf press, stamp out various designs.
- Using an airbrush and some iridescent colors – spray onto the leaves to make them "pop".
- Attach the leaves onto the ends of the branches by steaming the cake and applying.
